What is Ganache?
Basic ganache is a combination of cream and chocolate. To make truffles with different flavors we infuse some of the ganaches with all-natural ingredients such as espresso, nuts, liquors, coconut, fresh jalapenos, and spices. Leaving the ganache without the addition of flavors is wonderful too! Basic ganache filling is the most classic of all fillings.

About Our Chocolates
Most of our confections are "molded truffles", also known as "bonbons", or "French truffles". The tempered chocolate is poured into various shaped molds and then filled with a chocolate center. Our molded chocolates are defined by a delightfully crisp chocolate shell, and a luxuriously soft and creamy chocolate center. Only the highest quality chocolate, and careful attention to detail will produce a beautiful molded chocolate truffle.
Creek House Patisserie chocolates are handmade in small batches to insure the very best quality. We use only the finest chocolate, and no preservatives The chocolate ganache fillings enhance the rich flavor of the fine couverture chocolate that we use and are never overpowering.

Jalapeno Molded Truffles Yummy!!! My friend knows how much I love spice/heat, and she knows I love chocolate just as much. So she sent me these Jalapeno molded truffles. I do admit the combination didn't sound good, but I was wrong. It takes a second to taste the very slight tint of heat from the jalapeno. But it's just the right amount, very little. The chocolate swans are fabulous! The white chocolate shell complements the mil/dark chocolate ganache combination filling beautiful. The almond clusters were good, a higher quality than supermarket chocolate. I absolutely loved the dark peanut butter truffles and wished their were more of those in the canister than the almond clusters. The milk chocolate peanut butter cups were delicious as well. We have been in business since 2005. Our chocolates and pastries are featured in several Southern Oregon fine restaurants, gourmet stores and shops. Our chocolates have been available for purchase on Chocolate.com since May 2007.
Creek House Patisserie's Pastry Chef, Louise Ingber, is a Le Cordon Bleu graduate.
We are located in beautiful Ashland Oregon, home of the Oregon Shakespeare Festival.
Solid Chocolates & Nut Centers Some of our collections contain wonderful molded, solid bittersweet or milk chocolate pieces with or without toasted nuts.
Shelf Life, Storing, Allergies We never use preservatives. Chocolate truffles should be eaten within two weeks of purchase. Solid chocolates may be stored 1 to 2 months.
Store chocolates at cool room temperature, 58 to 64 degrees. It is better not to refrigerate or freeze them, they will lose their creaminess and glossy shine. However, if you must refrigerate, always bring to room temperature for about 1 hour before eating. Please keep them away from strong odors.
Solid chocolates, such as our Easter Bunnies, may be stored in a cool environment for 2 months.
All our products may contain trace amounts of peanuts, tree nuts, dairy products, and gluten.
